Sparkling white wine
Grapes: White grapes
Vinification: The grapes are pressed after harvesting and destemming. The wine is clarified and cooled through natural settling. Once the fermentation process has been completed, the wine is placed in vitrified cement vats to age; it is kept there until the second fermentation according to the Charmat method takes place.
Alcohol content: 11%
Sensory characteristics: Straw yellow colour, spiced scent of Mediterranean scrub The flavour is fresh and sapid, balanced by a pleasant bead that is the result of a long rest in the autoclave.
Pairing: Excellent when served as an aperitif, it is perfect with fish dishes, shellfish and seafood.
Serving temperature: 6 – 8 °C. It should be drunk within a year.
